Joey ended up stuck at work late tonight, so I pulled some chicken out of the fridge. The pantry is running kind of bare right now of some of our main staples, so I pulled this recipe out of my files from my old days on the BabyCenter Recipe Swap board and kind of altered it to be "tonsil friendly". After this is all over I think I'm going to get a Tonsillectomy Cookbook together and sell it on eBay....
A few notes about this recipe. First, I despise Swiss cheese, so I usually use Provalone and it's delicious. Today I didn't have any fresh mushrooms so I left them out - and also no Provalone so I used sharp Cheddar instead. (See what I mean about the pantry being bare?) So basically it's almost like a macaroni and cheese minus the macaroni and adding chicken. Make sense? And I left the breadcrumbs off of Tonsil Boy's chicken. Not taking chances with that one.
Monkey Man and Joey love this recipe. It's easy, too. Give it a try sometime, serve it with a good green veggie and either some rice or egg noodles.
Chicken and Mushrooms Au Gratin
1 T Butter
1/4 C Bread Crumbs (I've used Ritz Cracker Crumbs too)
1 T Oil
4 Boneless, Skinless Chicken Breasts
1/4 t salt
1/8 t pepper
3 c whole fresh mushrooms
1 garlic clove minced
1/2 c half and half
3/4 c milk
1 T flour
1/8 t salt
3-4 slices Processed Swiss Cheese
Melt butter in large skillet over medium heat. Add bread crumbs. Cook and stir until dark golden brown. Remove crumbs from skillet and set aside.
Heat oil in same skillet over med-hi heat until hot. Add chicken sprinkle with salt and pepper. Cook 4-5 minutes or until brown. Turn chicken and move to side of skillet. (Basically have the chicken line the sides of the skillet leaving a hole in the center)
Add mushrooms and garlic to the center. Cook 3-4 minutes or until mushrooms are tender.Stirring occasionally. Reduce heat to med-low; Cover and cook 15 to 20 minutes or until chicken is fork tender and juices run clear.
Place chicken in shallow baking dish. Spoon garlic and mushrooms over and around chicken. Cover to keep warm.
In same skillet combine half and half, milk, flour, and salt. Cook and stir until mixture boils and thickens. Add cheese and stir until melted. Pour over chicken and mushrooms. Sprinkle with bread crumbs.
